Dispatches from the Field, a new digital program designed to bring The Explorers Club community closer—wherever you are.
Each session kicks off with a 15-20-minute talk from a Featured Speaker, recorded and posted later to the public on explorers.org and our YouTube channel.
This will be followed by Campfire sessions—intimate, Members-Only breakout groups where you can connect, share ideas, and build relationships.
This edition features Joseph Yoon MR’23, to present “How Six Continents of Bugs Changed What I Know About Exploration”
The Explorers Club defines itself by curiosity enacted in the field — and Joseph’s story is exactly that. This lecture frames his 500+ days on tour not as food advocacy, but as a genuine field expedition across cultures, ecosystems, and culinary traditions. What does it mean to explore through flavor? What has tasting insects across six continents revealed about human civilization, biodiversity, and the future of the planet?

Joseph Yoon
Chef Joseph Yoon is one of the world’s leading voices on edible insects and the future of food. A pioneering member of The Explorers Club and Chef Advocate for the UN’s IFAD, Yoon founded Brooklyn Bugs in 2017 with a deceptively simple mission: to make the world fall in love with insects — one delicious bite at a time.
Over more than 500 days of touring across six continents, Yoon has brought his distinctive blend of culinary creativity and storytelling to some of the world’s most prestigious institutions — from Cornell, Purdue, and Tufts to the American Museum of Natural History, the FDA, COP27, and Google’s Food Lab.
